A closer look at Bio-Hotel Stanglwirt
Stanglwirt has stood under the Wilder Kaiser for more than four hundred years and has been in the same family since 1722. The order of the words matters here. It is an organic farm of over a hundred hectares with a five-star hotel built into it, not a hotel that keeps a few cows. Most of the meat, charcuterie, fish, dairy and bread on the table comes from the property's own production, and the herd's milk goes straight into house-made cheese, butter and yoghurt. All the water in the house, and in the twelve thousand square metres of wellness world, comes from the Kaiser spring on the land, warmed by ground heat and sun through a heat pump rather than by a boiler.

The material record here is stronger than almost anything in this index. Timber bricks bedded in lime mortar rather than cement. Timber beam ceilings instead of steel decks. Solid wood furniture only, in Swiss stone pine, on floors of local mountain larch. Bed linen, upholstery and towels in organic cotton and linen, carpets in pure new wool, and every mattress in the house filled with horsehair and sheep's wool under a named product, Das grüne Bett. Each of those is a specification a guest with a sensitivity can act on, which is what separates a material list from an atmosphere. The Austrian Ecolabel licence register carries the same list, checked by an independent assessor every four years.
The two things missing, and one to watchNothing is published about the air: no ventilation system, no filter grade, no reading. Nothing is published…
Nothing is published about the air: no ventilation system, no filter grade, no reading. Nothing is published about light: no colour temperature, no blackout specification. Both are odd omissions in a house this precise about its fabric, and both are cheap to close. One claim needs flagging. A self-managed listing on the directory biohotels.de says sleeping places at Stanglwirt are free of electromagnetic fields. Nothing on the property's own site repeats it, and no shielding, cabling or field reading is published anywhere. It is recorded here at the tier a bare claim earns, and it is the one line on this record that a verification visit would settle in an afternoon.
What this property publishes, area by area
All eight areas, for every record. Each row opens to what was published, where we read it and when.
Publishing something is not the same as it being good. Every line below was read and placed by a person, not scored by a machine. What each rung means
Named means the property published something you can look up: a brand, a product or a number. Stated means it says so with nothing behind it. Not published means we looked and found nothing, which is a gap in our reading and not an answer about the building.
Air EcologyNo evidence recordedNothing found yet
The air in a closed room is what you breathe for eight hours. What decides it is the filter grade, the fresh air rate, and whether damp has ever been looked for.
We found nothing published on this. That is a gap in what we could read, not a finding about the building.
What to ask them
What filter grade is fitted to guest room air handling, for example MERV 13 or HEPA H13?
What is the fresh air supply rate per person in a guest room?
Are carbon dioxide, particulate or volatile organic compound levels measured, and are the readings published?
Is there a mould inspection and remediation protocol, and when was it last run?
Are there gas cooktops, fireplaces or other combustion sources inside guest rooms?
Water Integrity2 source notesPublished or supplied
You drink it, cook with it and stand under it. What is in it depends on the source and on what, if anything, filters it, and both are things a property can name.
All water in the house is drawn from a single named source on the property, the Kaiser spring. The property states that water experts and hygiene scientists confirm the quality, and publishes no laboratory, panel or result.
Das gesamte Wasser wird aus der eigenen Stanglwirt Kaiser-Quelle bezogen (Wasserexperten und Hygiene-Wissenschaftler bestätigen die besondere Wassergüte)
The 12,000 square metre wellness world is published as filled with mountain water from the property's own springs, warmed by ground heat and sun through a heat pump plant rather than by a conventional boiler.
Hier wird nur natürliches, durch Erdwärme und Sonne erwärmtes, Bergwasser aus eigenen Quellen verwendet.
What to ask them
What is the water source, and what treatment is applied before it reaches a guest room?
Is there a published contaminant test panel, and which laboratory ran it?
Is shower and bath water filtered, and to what specification?
How are pools and spas sanitised, and is the chemistry published?
How is drinking water delivered, and is it treated on site?
Light RhythmNo evidence recordedNothing found yet
Light is what tells a body the time of day. The part a building controls is what its fittings emit and when, which a named product or a colour temperature makes checkable.
We found nothing published on this. That is a gap in what we could read, not a finding about the building.
What to ask them
Is guest room lighting tunable or circadian, and what specification is published?
What colour temperatures are used in the evening, and are fixtures flicker free?
Do sleeping areas have full blackout, and is it specified?
What daylight access does a typical room have?
Is exterior lighting shielded or reduced overnight?
EMF Harmony1 source notePublished or supplied
Wiring, routers and devices put electromagnetic fields in a room. What a building decides is where they sit relative to the bed, and whether anyone has measured it.
A self-managed listing on the third-party directory biohotels.de records reduced electrosmog as a feature and states that sleeping places are free of electromagnetic fields. No shielding product, cable class, demand switch, method or reading is published, and the property's own site does not repeat the claim.
Are guest rooms wired for data, or is access wireless only?
Where are wireless access points and smart meters placed relative to the bed?
Have field levels been measured in sleeping areas, and by whom?
Can a guest have wireless disabled in their room on request?
Is any shielded cabling or shielding material specified in the build?
Materials and Textiles5 source notesPublished or supplied
The things you sleep on and touch: the mattress, the sheets, the pillows, and the paints, glues and finishes around them. A named fabric, a fibre content or a certification can be looked up. A structural palette tells you about the building, not about the bed.
Every mattress in the house is published as filled with horsehair and sheep's wool, and the filling is attributed to a named product, Das grüne Bett by Willi Dungl.
Alle Schlafmatratzen sind mit Rosshaar und Schafwolle gefüllt („Das grüne Bett“ von Willi Dungl)
Bed linen, upholstery fabric and towels are published as pure organic cotton and linen, and the carpets as pure new wool. Neither the supplier nor any textile certification accompanies it.
Bettwäsche, Möbelstoffe und Handtücher aus reiner Bio-Baumwolle und Leinen. Teppiche aus reiner Schurwolle
The structure is published to material and method: timber bricks bedded in lime mortar rather than cement, timber beam ceilings in place of steel decks, and solid wood furniture only.
Instead of steel ceilings, for instance, we only use wooden ceilings. All the timber bricks are retained with lime mortar and not cement and we only use solid wood furniture.
The rooms are published as furnished throughout in Swiss stone pine, with floors of local mountain larch and straw-core loungers, and the certifier's register carries the same material list.
So sind die 170 Zimmer und Suiten ausschließlich mit hochwertigsten Zirbenholz-Möbeln, antibakteriellen Fußböden aus heimischem Gebirgslärchenholz und biologischen Strohkern-Liegen ausgestattet.
Daily cleaning is stated to use biological agents, with no product, brand or chemistry named.
Verwendung von biologischen Mitteln für die tägliche Reinigung
What to ask them
What are the mattresses made of, and are they treated with flame retardants?
What is the fibre content of the linen, and is it certified, for example to GOTS or OEKO TEX?
Which paints, adhesives and sealants were specified, and are they low emission?
What cleaning and laundry products are used, and is the list published?
Are there named low emission certifications on the flooring or joinery?
Food and Kitchen2 source notesPublished or supplied
What a kitchen cooks with and where it buys are the parts of a stay you take inside you. A named oil, a named supplier or a published share is checkable; “healthy” is not.
The hotel is attached to its own organic farm of more than 100 hectares, and most of the meat, charcuterie, fish, dairy and bread served is published as coming from the property's own production, with the remainder from named categories of regional partner.
Most of our fresh meat and meat products, fish, milk products and bread come from our own in-house production.
A third party publisher records the farm's dairy output and where it goes: the house herd produces 140 tonnes of organic milk a year for cheese, butter and yoghurt served at breakfast, with eggs from the children's farm coop.

The property's own herd of cows produces 140 tonnes of organic milk a year, which goes straight into house-made cheese, butter, and yogurt served at breakfast, while a children's farm coop supplies the eggs.
What to ask them
What share of produce is grown on site or sourced locally, and is it verified?
Which cooking oils are used, and is the policy published?
What cookware is used in the kitchen?
Is kitchen and ice water filtered, and to what specification?
Is there a published position on additives, preservatives or allergens?
Biophilic and Healing Design2 source notesPublished or supplied
Daylight, planting, outlook and the way a room meets the outside are what make a place feel the way it does. Named design decisions can be checked; atmosphere cannot.
The property publishes a building method rather than an intent: every conversion, extension or new build is carried out on the basis of the house's building-biology philosophy, using mainly regional materials, with timber as the principal structural material.
Gebaut wird kompromisslos ökologisch, der wichtigste Baustoff ist heimisches Holz.
Rooms are described as handcrafted in traditional methods and finished in natural materials named as untreated Swiss stone pine, pure wool and linen, with the Wilder Kaiser massif as the outlook. No outlook measurement or planting inventory is published.
Our exquisitely furnished rooms and suites are lovingly handcrafted using traditional methods and then beautifully completed with high-quality natural materials in the form of untreated Swiss stone pine, pure wool and fine linen.
What to ask them
Does every guest room have direct outdoor access or an operable opening?
What is the published design intent behind the natural materials used?
What are the typical ceiling heights and room volumes?
Was the landscape designed with native planting, and is the palette published?
Sound and Sensory EcologyNo evidence recordedNothing found yet
What you can hear at three in the morning decides whether you slept. Insulation, plant and machinery, and what sits next door are what decide it.
We found nothing published on this. That is a gap in what we could read, not a finding about the building.
What to ask them
What is the measured background noise level in a guest room at night?
What acoustic separation is specified between adjoining keys?
How loud is the guest room air conditioning at its lowest setting?
Is fragrance diffused into guest rooms or public areas, and can it be declined?
Not everything is published, and an empty row is a gap in what we could read rather than a fault in the building. If one of these matters to you, ask the property before you book. Send us something that updates this record
