Materials and Textiles
The interiors are itemised by material and by maker: handmade chairs, willow and stone gathered on the estate, regional marble, and named furniture and lighting houses alongside them.
In their words: “The rural inspiration is evident in the original objects designed by artisans – the handmade chairs, the use of willow and stones collected on the estate, and the local regional marble – which coexist alongside Portuguese and international designer objects by Olaio, Vista Alegre, Marcel Wanders and Alvar Aalto”
The spa's product lines are named rather than described: facial treatments use the Azorean brand IGNAE, and body treatments are built on wine, honey and rosemary produced on the estate.
In their words: “The treatments at the new M Wellness Spa are divided into IGNAE experiences, focused on specific facial products; and body treatments using wine, honey and rosemary, three primary ingredients of Herdade da Malhadinha Nova.”
Food and Kitchen
The kitchen's supply is itemised by product and by breed, all from the estate's own 744 hectares: wine, olive oil, honey, Barbela wheat, Alentejo cattle, white and black Merino sheep and black pig, each under protected designation of origin, with vegetables and fruit from restored gardens and orchards.
In their words: “The organic and self-suficient production is now a reality on the estate's 744 hectares. Our restaurant serves wines, olive oil and honey, Barbela wheat, the Alentejo cow, white and black Merina sheep and the black pig, all with PDO protected designations of origin, and vegetables and fruit from the gardens and orchards that have been restored on the estate.”
The vineyard is published with its area and the year it converted: 80 hectares in organic production since 2019.
In their words: “Herdade da Malhadinha Nova aims to produce high quality Alentejo wines from its 80 ha of vineyards, which have been under organic production since 2019, respecting the highest quality standards and reinforcing our commitment to sustainability.”
An independent guide records the chef's own account of the estate's sourcing: waste, water and energy managed on site, with olive oil, honey and vegetables produced there and native breeds raised on the land.
In their words: “We try to keep the traditions of the Alentejo alive and respect its ecosystem through measures such as the management of our waste, water and energy. We also produce our own olive oil, honey and vegetables and raise native breeds in harmony with our natural environment.”
A third party publisher records the restaurant as run on local and mostly organic products grown on the property, with the spa built on the same estate ingredients.

Biophilic and Healing Design
The estate publishes its land practice as the governing decision: organic, sustainable and extensive agriculture across the property with human intervention deliberately minimised, and native livestock breeds kept in the same system.
In their words: “With human action reduced to a minimum, is practiced organic, sustainable and extensive agriculture.”
The spa is attributed to a named studio, Aires Mateus, and published with its area and its rooms: 110 square metres holding a sensory shower, three treatment rooms and a sauna, with the interior colour taken from the flora of the property.
In their words: “Minimal, timeless and immersive. These are just a few adjectives that define the new wellness space at Herdade da Malhadinha Nova, projected by Aires Mateus studio and carrying exclusive facial treatments in Alentejo by the Azores-born brand IGNAE.”
The accommodation is described as separate houses fitted into the landscape rather than one block, each with its own terraces and pools looking over the Alentejo plain.
