Blackberry Farm began as a six-bedroom inn in the foothills of the Great Smokies and is now 68 accommodations on an estate of several thousand acres. What sets it apart is that the agriculture is the business rather than the backdrop. The dairy flock is published to breed, three of them, predominantly East Friesian, milked on site and turned into the cheeses on the plate by the farm's own cheesemakers. There is a Preservation Kitchen and a butcher on the property. Naming a breed is a small thing that tells you a great deal: it means somebody chose the animal for the milk rather than buying the milk.

A garden with a published method
The garden runs on saved seed, compost built from the kitchens and the stables, and companion planting chosen to draw in the predators of its own pests. The property states plainly that it does not spray, and describes what it does instead.
