A family-owned cloud forest lodge above Monteverde, opened in 1985 as only the second place to stay in the region and now run by the second generation. Twenty-six rooms, suites and villas sit at canopy level in alpine chalet architecture with floor-to-ceiling windows, hand-carved local furnishings and no carpet. What makes the record unusual is that a non-toxic travel publication stayed here for four nights, worked through its verification questionnaire on site, and published what it found, including what it could not confirm. That is closer to an assessment than most published sources ever get.

The kitchen and the farm

Restaurante Celajes sources from Finca Madre Tierra, the family's own working farm twenty minutes away, and from nearby fisheries. The growing method is named on the property's own pages: the Biointensive Agrarian Method, worked through water conservation, natural pest controls and organic soil enrichment, with dining residuals going back out as compost and animal feed. The chef confirmed to the reviewer that the kitchen cooks in olive oil and butter or ghee, with seed-oil-free service on request, and the menu turns over three times a year. Naming both the farm and the method is what separates this from farm-to-table as a phrase.

What the room holds, and what it does not

No fragrance on arrival, none in the room, none in the bath or spa products, no diffuser and no scented cleaning. Bath products are the hotel's own line in refillable bulk dispensers, with unscented alternatives available. Bedding and towels are cotton, the wood is real, and the windows and sliding doors open onto the forest. The reviewer also recorded what she could not verify, and it is the honest half of this record: the housekeeping brands were not disclosed to her, and no water filtration system was disclosed at all. The mountain tap tasted musty enough that she asked for a glass carafe instead.

Where it stands

Belmar publishes more sustainability detail than almost any property its size, and nearly all of it measures carbon, waste and land rather than the guest.
